We had a Mexican food carry-in – yummy! Hot taco dip, white cheese enchilatas, chicken jerk taco bake, Mexican wedding cookies, chips and salsa & drinks. I'll share my hot taco dip recipe at the end.
For our swap inspriation, we used the color palette from this 2014 bridal trend color picture.
The swaps didn't have to be bridal..but I did want to incorporate the Dress Up Framelits 130101 in mine.
I used Stampin' UP! colors of Calypso Coral, Costal Cabana, Crumb Cake and Whisper White as my colors inspired from the photo.

Hot Taco Dip Recipe
1 lb Hamburger
Taco Seasoning packet
Refried Beans – 1 reg. can
Salsa – 1 reg. jar size
Sour Cream 1 cup
Shredded Cheddar 1-cup
Optional: Sliced olives, fresh diced tomatoes and whatever other items you like!
Brown hamburger with onions. Drain off grease. Add taco season packet according to directions on packet. While meat browning, open can of refried beans and stir in salsa. Layer in rectangular baking dish:
Meat with seasoning
Refried beans with salsa
Spread sour cream
Sprinkle shredded cheese
Optional items too!
Bake at 350 degrees for 20-30 minutes. Will bubble when done and heated through.
I doubled the recipe and we have left overs from last night! I plan to make taco salads today with the extras. Do you do that too? think, just in case people are hungry…I better make a bigger batch!
